Pangasinan's PIGAR PIGAR
Pigar pigar, is a very popular street food in Dagupan, Philippines it’s so popular it has its own festival. This dish is a very simple dish that is made out really thin slices of beef and liver quickly deep-fried and served with fresh slices of onions. Though the popular meat used nowadays is beef the original version uses carabeef a meat that comes from carabao, also called water buffalo.
RECIPE:
Ingredients:
1 lb sirloin roast beef, sliced thinly
1 large onion, sliced like onion rings
1 tsp salt
1/2 tsp black pepper
cooking oil
vinegar
fish sauce (patis)
How to cook pigar pigar:
1. In a pan, add enough oil for deep-frying.
2. Heat up the oil until it is near its smoking point, then add the beef slices.
3. When the beef is cooked and turned to brown color add the onion rings.
4. Cook until the onion rings become transparent.
5. Serve hot with vinegar with fish sauce as dipping sauce.

1 malaking sibuyas, hiwain ng pabilog
1 kutsaritang asin
1/2 kutsaritang paminta

Paano magluto ng pigar pigar:
1. Sa isang kawali, magdagdag ng sapat na mantika para sa malalim na Pagprito.
2. Painitin ang mantika hanggang sa ito ay umusok pagkatapos ay idagdag ang mga karne ng baka na hiwa.
3. Kapag ang karne ay luto na at ito ay kulay tsokolate na idagdag ang sibuyas.
4. iluto hanggang sa maging transparent ang sibuyas.
5.ihain ng mainit. maaring gumamit ng mantika o patis bilang sawsawan.
